Sweet Potato Cottage Pie recipe

Sweet Potato Cottage Pie

  • 2 lbs sweet potatoes (red fleshed)
  • 1/4 cup half & half
  • 2 tbsp pastured butter (Kerrygold)
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 3/4 cup diced celery
  • 3/4 cup diced carrot
  • 1 1/2 cup diced onion
  • 5 garlic cloves, minced
  • 1 red bell pepper diced
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp ancho chili powder
  • 1/4 tsp cinnamon
  • 1 lb grass fed ground beef
  • 1 can diced tomatoes (14 oz, organic, low-sodium)
  • 1/2 cup diced black olives

Preheat oven to 425 degrees. Line a baking sheet with heavy-duty foil. Slice the sweet potatoes in half, lengthwise and set them cut-side down on the baking sheet. Roast until very tender, about 35 minutes.

When cool enough to handle, scoop the flesh of the sweet potatoes into a medium mixing bowl. Add the 1/2&1/2, butter, thyme, 1 tsp salt and 1/2 tsp pepper. Mash with a potato masher until smooth and creamy. Set aside.

Heat the oil in a large saute pan over medium heat. Add the celery, carrot, onion and 1 tsp salt. Cook, stirring frequently until vegetables are soft, about 10 minutes. Add the garlic and bell pepper; stir. Add the cumin, oregano, chili powder and cinnamon; stir and cook for 1 minute. Add the beef and season with 1 tsp salt. Cook, stirring and crumbling beef, until beef is no longer pink. 

Pour the tomatoes and their juices into the pan and cook, uncovered, until thick, about 1 minute. Add the olives and cook another minute. 

Transfer the beef mixture to a 9x9 baking dish. Spread the sweet potato mixture evenly over the beef. Bake until bubbling around the edges, about 30 minutes. Switch to high-broil setting and position the rack to 6” beneath the flame. Broil the pie until sweet potatoes are a bit browned, about 3 minutes. Let rest 15 minutes before serving.
